Pizza party for 1

I started making this personal pizza recipe during the beginning of lockdown and it’s become a mainstay in my normal rotation!

It’s quick, easy, and really satisfies my savory craving without breaking the points bank! I prefer vegetarian pizza but you could easily add pepperoni or sausage crumbles, or additional veggies that you have on hand!

The pizza is 5 pts on WW Blue, and the ranch is 1 pt on Blue!

Pizza Ingredients:

  • Flatout Light Italian herb flatbread – 2pt
  • Laughing Cow Swiss wedge – 1pt
  • 1/2 cup Canned diced tomatoes – 0pt
  • 1/2 cup Trader Joe’s Almond mozzarella shredded cheese alternative – 2pt
  • Sliced bell peppers – 0pt
  • Banana peppers – 0pt
  • Sliced red onion – 0pt
  • Green onion – 0pt

No-Guilt Ranch:

  • 1/2 cup nonfat plain greek yogurt – 0pt
  • 1/2 packet of Ranch seasoning – 1pt

Directions:

Pre-heat oven to 350

Spread your Laughing Cow wedge onto your flatbread/tortilla (this is my favorite brand because it tastes more like an actual flatbread than a tortilla, but any low point tortilla will work!)

Top with diced tomatoes, and your almond mozzarella shreds. Lastly, top with veggies, and bake for ~15 min or until the edges start to crisp.

While the pizza is baking, mix your yogurt with the ranch seasoning. Water it down as needed to reach ranch consistency. Being from the Midwest, I simply can’t eat pizza without ranch, so this little ranch hack has been a saving grace.
